Hope you enjoyed your Memorial Day Weekend!   My family abandons me each Memorial Day Weekend, so I get a quiet house all to myself.   Oddly enough, I spend it cleaning and do stuff, so that when they return, I have nothing to do buy enjoy them.

Dinners

  • Family Picnic (Pitch-In)
  • Chili Hot Dogs w/ Potato Chips, Carrot Sticks, & Fresh Fruit
  • Rotisserie Chicken, 3-Cheese Mash Potatoes, & Grilled Asparagus
  • Tomato & Garlic Pizza with Steamed Pea Pods & Watermelon Slices
  • Vegetable Rice w/ Edamame & Strawberries
  • Chicken & Dumplings with Mash Potatoes & Rolls (made from left over Rotisserie Chicken)
  • Salad Night

We have a busy week, so our meal plan is a bit boring.   We’ll barely be here!

Dinners

  • Hot Dogs, Carrot Sticks, and Berries (Softball Game, Picnic at the Field)

Meal Plan Monday – 5/16/11

Oh my gosh!   Now that my kids are getting older, I feel like we are on the go non-stop.   Ady often has softball games at 6:00 PM and a quick warm up before hand at 5:30 PM.   Since her uniform is white, I don’t want her to get ready until after she eats, so we’re either eating a nice dinner at 4:30 PM when we’re not quite hungry enough or a quick dinner at 7:30 PM right before bed time when we get home.   My solution has been finger food picnics at the park before the game consisting of foods like carrot sticks that won’t stain her white uniform.

I know many of you have older kids with lots on their plates, so any creative meal suggestions or ideas?   What are your favorite finger foods?   We have 2 games a week and a practice, so I’m all ears!   If I don’t think of something soon, I’m going to be sick of finger foods.   It does keep the younger two entertained through the game though, since they are both slow eaters.

Dinners

My   kids absolutely love edamame.   I never thought about buying them until a friend mentioned that she gave them to the kids in the shell.   They love popping out the little beans and eating them so much, they don’t even care that it’s a green vegetable, has soy, and it so good for them.   We toss them in their shells in a little sea salt after they steam.   You can actually be individual packages that steam in the microwave in a huge bag at Sam’s Club.   Since I’ve never seen a coupon for edamame, this seems to be the best deal I’ve found and they are quick, plus they come with sea salt packets.
