Raspberry Shrimp Salad Recipe

INGREDIENTS
Lettuce
Shrimp (chilled, not frozen)
Raspberries
Apples (diced)
Cranberries (dried)
Walnuts and/or Almonds
Cucumbers (sliced)
Raspberry Vinaigrette

The quantities of all ingredients depend on if you are making a single salad for one individual or a huge salad for a group. It’s very easy to gauge as you add ingredients though! Shred lettuce and toss with raspberries, nuts, apples, cranberries, cucumbers, and vinaigrette. Top with shrimp and serve cold!

Strawberry & Walnut Salad Recipe

Salads are a very personal thing. Everyone has their own favorite ingredients. Below is just an example of Strawberry & Walnut Salad, but you can mix it up any way you’d like to make it a family favorite.
Entree salads are the perfect all-in-one meal, since you can get your dairy, fruits, vegetables, grains, and protein in one bowl.

Ingredients
Lettuce (or Spinach)
Diced Strawberries
Croutons
Diced Red Onions
Slivered Walnuts
Shredded Parmesan Cheese
Other Possible Ingredients
Poppy Seeds
Bacon Bits or Chicken Strips
Diced Vegetables
Mandarin Oranges
Grapes
Black or Green Olives
Sesame Seeds
Pecans, Almonds, or Sunflower Seeds
Cheddar or Mozzarella Cheese
Small Shrimp
Dressing (select one or your favorite vinaigrette!)
Vinegar & Oil (1 c oil, 1/3 c vinegar, 1 tbsp sugar, & 1/8 tsp pepper)
Raspberry Vinaigrette
Balsamic Vinaigrette
Salads are easy… Dice everything up to bite size (or smaller) and throw it in a bowl! Let your kids make their own salads for a family night activity. You can cut everything up (if they are too small) and they can pick their ingredients and put it in their bowl. Add bread or a bread stick to the side, if desired.
