Manicotti at Home Recipe

Here’s a few deals for your home from Ann-Marie of Chaos Is Bliss.

This week I’d love to share with you a favorite family recipe of mine, for Manicotti. This version however may not be preferred by true Italians, because instead of a traditional cheese filling with Ricotta, and maybe an egg to hold it together, my family’s version has a meat filling with ground beef, cottage cheese, and the “zip” of Miracle Whip.

This version would make for a full package of Manicotti noodles, enough to feed 8 people. You could freeze half for a tasty meal without the work.

Ingredients:

  • 1 pkg Manicotti noodles
  • 1 ½ # ground beef
  • 1 tsp garlic powder
  • 1 cup cottage cheese
  • 1/2 cup Miracle Whip
  • 1 ½ cups shredded mozzerella
  • 1 jar spaghetti sauce (my favorite is tomato & basil)

Easy peazy directions:

Brown ground beef with garlic powder. While that’s going on, boil noodles on med-high for 7 minutes to al dente, then drain. Drain ground beef. Mix ground beef with cottage cheese, Miracle Whip and mozzerella. Using teaspoon, stuff mixture into noodles until full, place in greased 9″x13″ baking dish. Top with spaghetti sauce. Cook at 350 ° for 20 minutes.

Step 1: Brown ground beef with garlic powder.

 

Step 2: Boil noodles on med-high for 7 minutes to al dente. Loosely translated, this means “not-so-squishy”.

 

Step 3: After draining ground beef, mix with cottage cheese, Miracle Whip and mozzerella. May not look so pretty, but boy will it be delish!

 

Step 4: After draining noodles, stuff mixture into noodles with teaspoon until full.

 

Step 5: Place in greased 9″x13″ baking dish. Top with spaghetti sauce (and oregano if you like). Cook at 350 ° for 20 minutes.

Ingredients

  • 2 boneless chicken breasts
  • 3 cups pasta – boiled
  • 1 pkg frozen mixed vegetable
  • 1/4 cup bacon bits
  • 1   to 1 1/2 cartons Philadelphia Cooking Cream – Italian cheese and herb
  • 1/4 tsp pepper

Directions

1.   Cook chicken in skillet with a little water.   Cut into small pieces.

2.   Steam mixed vegetables in microwave.

3.   Add all ingredients and stir together in skillet until well heated.

Cooking Tips & More

This was our dinner tonight. Served with a side salad and bread.   Strawberries and cool whip for dessert.   Quick and easy after a long day at work.

Frugal Recipes

 

Ingredients

  • 1 can Condensed Cream of Mushroom soup
  • 1 pouch dry onion soup mix
  • 6-8 small red potatoes
  • 6 medium carrots
  • 3 1/2 lb boneless beef roast

Directions

1.   Stir soup and onion soup mix potatoes and carrots in slow cooker.   Add Beef on top. Spoon some of mixture from bottom on top if beef.

2. Cook on low for 8-9 hours or high 4-6 hours or until beef is tender.

Frugal Recipes

This is one of my Grandma Isa’s recipes.

Ingredients

  • 1 and 1/2 pounds of round steak – cut into 1/2 in thick strips
  • 1/4 c flour
  • 1/2 teas salt
  • 1/8 teas pepper
  • 1/4 c shortening – for browning the steak
  • 1 can crushed tomatoes – drained and save the liquid
  • 1 and 3/4 cup water
  • 1/2 cup chopped onion
  • 1 small clove garlic – minced
  • 1 Tbls beef gravy base

Directions

1.   Coat steak in mixture of Flour salt and pepper, then brown the strips in a large skillet with hot shortening.

2. Add reserved liquid from tomatoes, water onion garlic and gravy base to the meat.   Cover and simmer until tender.

Cooking Tips & More

This is really good served over mashed potatoes or noodles.

Also I have never used gravy base and am not sure what it is but when I make this I add a little mixture of flour and milk to make the liquid a little thicker like gravy.   I also add some strips of Green and Red Peppers sometimes because I think Pepper Steak should have peppers and wonder if Grandma may just have forgotten to put that in when she wrote down her recipe.

Frugal Recipes

 

Ingredients

  • 6 boneless chicken breasts ( cut into medium pieces)
  • 1 jar Salsa
  • 1 packet taco seasoning
  • 1/2 cup water

Directions

1.   Put all ingredients in crockpot and cook all day. (or until you can shred with a fork)

Use this chicken to make Chicken Tacos, Chicken Taco Salads, Add to soups etc.

Frugal Recipes

Ingredients

  • 4 Portabella Mushrooms
  • 1 Diced Chicken Breast (cooked)
  • 1 Diced Tomato
  • 1/2 Diced Onion
  • 1 Cup Shredded Mozzarella Cheese
  • 1 Cup Shredded Spinach
  • 1/2 Cup Diced Green Peppers
  • Parmesan Cheese
  • Extra Mozzarella Cheese

Directions

1.   Toss together all of the ingredients, excluding the Parmesan Cheese, Extra Mozzarella, and Portabella Mushrooms.

2. Cut the stems off of the Portabella Mushrooms

3. Spoon the mixture into the Portabella Mushrooms

4. Baked 20 minutes at 375 degrees.

5. Top with Extra Mozzarella Cheese and Parmesan.

6. Serve Hot

Cooking Tips & More

Dice up any extras to make a nice Chicken Pasta Primavera mixture later, by adding a bit of olive oil, garlic, oregano, ground pepper.   Toss with pasta!
