Frugal Recipes

How great to wake up and breakfast for the whole family be ready.  Add coffee and juice and we are ready to eat.

Crock Pot Egg Casserole
Recipe Type: Entree
Serves: 8-10
Ingredients
  • 6-8 strips of bacon, cooked crisp and chopped
  • 1 onion, chopped
  • 1 clove garlic, peeled and minced
  • 1 green or red pepper, chopped
  • 1- 2 lb bag frozen hash browns
  • 1 1/2 cups shredded cheese
  • 12 eggs
  • 1 cup milk
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/2 tsp pepper.
Instructions
  1. Spray crock pot with non stick cooking spray.
  2. Saute onions, garlic and pepper for 5 minutes.
  3. Put 1/3 hash browns in bottom of crock pot.
  4. Add 1/3 of the bacon, 1/3 onion mixture, 1/3 cheese.
  5. Repeat layers two times ending with cheese.
  6. In large bowl mix together eggs, milk, dill, salt and pepper.
  7. Pour over ingredients in crock pot.
  8. Cook on low 8 to 10 hours.
Notes

When done temperature in middle should be 160 degrees,

Frugal Recipes

Ingredients

  • 1 large baked potato (russett or sweet)
  • 1 Tbsp. butter
  • 2 eggs
  • 2 strips bacon, cooked and diced
  • 2 Tbsp. shredded cheese
  • 1 Tbsp. fresh parsley, chopped
  • salt and freshly ground black pepper

Directions

Lay the baked potato on its side, and use a knife to carefully cut off the top third of the potato.  With a spoon, hollow out the middle of the potato to make a “bowl”, leaving the potato as thick or thin as you’d like.  (Just remember, the more room you leave, the more room for eggs, bacon and cheese!)

Place 1/2 tablespoon of butter in the middle of each bowl.  Then gently break an egg into each bowl, careful not to break the yolk.  Top with bacon, cheese, parsley, and then season with salt and pepper.

Bake at 350 degrees F for 20-25 minutes, or until the egg whites are set.  Serve immediately.

Easy and tasty Pumpkin Muffins

Pumpkin Muffins Recipe
Recipe Type: Dessert
Ingredients
  • 1 White or Yellow Cake Mix
  • 1 – 15 oz Can Pumpkin
Instructions
  1. Mix together
  2. Put in Muffin pan lined with papers
  3. Bake at 350 degrees for 20-25 minutes.
Notes

Add a few Pumpkin pie spices. Maybe a dusting of powdered sugar or icing.

Frugal Recipes

Ingredients

  • 1 1/2 cup All Purpose Flour
  • 1 1/2 cup Quick cooking oats
  • 1 cup 100% bran cereal
  • 1 cup firmly packed brown sugar
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup butter or margarine
  • 2 eggs

Directions

1.   Measure all dry ingredients into large mixing bowl.

2. Cut in butter until mixture crumbles

3.   Add eggs and mix well

4. Place 1 inch dough balls 2 inches apart on ungreased baking sheet.

5. Bake at 375 for 10 to 12 min.   Makes 5 dozen cookies.

Frugal Recipes

About 3 times a year we all get together and spend 3-4 days at my Brother and Sister in laws house -(Thanks Gary and Jodie).   One morning during that stay My brother in law Saul makes his wonderful Crepes.   We all love them.


Ingredients

  • 1 cup flour
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla

Directions

1.   Mix together egg and flour

2.   Add milk and vanilla, then mix until smooth

3.   Heat oils in skillet or crepe pan.

4.   Spread 1/2 to 3/4 cup of mix in the bottom of pan. Cook them like you would a pancake but remember they are thinner so less cooking time.

Cooking Tips & More

Serve with maple syrup or my favorite – fill with cottage cheese and strawberry jam and roll them up.

Holiday Recipes


  • 2/3 cup dry powdered milk
  • 2 t pumpkin pie spice
  • 1 t cinnamon
  • 6 T flour
  • 1 t baking powder
  • 1 t baking soda
  • 8 pkts sweetner
  • 2 eggs
  • 1 cup pumpkin
  • 1 t vanilla
  • 1/2 cup grated carrots
  • 4 T raisins


  1. Combine all dry ingredients in bowl.
  2. In separate bowl combine eggs and vanilla.
  3. Add pumpkin and mix well.
  4. Add dry ingredients, carrots and raisins. Mix well
  5. Bake at 350 for 15 min.   Makes 12 muffins.
