How to Get Kids to Eat Vegetables with a Smile (Birds Eye Review & Giveaway)

I’ve been told I have some weird kids, since they happily eat salad and other foods not typically on the kid-friendly food list. I promise you though, getting our kids to eat their vegetables takes some creativity!

You see that delicious strawberry smoothie pictured above? It has carrots blended into it, along with strawberries, mango, and cauliflower. My kids know this, but love it so much they gobble them down. In fact, I always make too much, then put our left over smoothie in small containers and freeze them for lunchboxes. They keep their food cold and are just melted enough for them to enjoy by the time lunch rolls around. That way they are getting vegetables, dairy, and fruit in their bellies at lunchtime – guaranteed!

But, my favorite way to get vegetables in their belly willingly is to have them do the cooking (or at least the assembly). Not only does it give me a night off from cooking, but usually guarantees plates will be emptied without a fight.

Our favorite quick meal, especially for chaotic evenings, is Kiddie Kabobs. Basically, we lay out random foods from all the food groups and the children build their own kabobs, then enjoy them!

Taste Tester Corn Jalapeno Dip Recipe by Birds Eye

When it comes to my kids, everything tastes better with dip! We dip food in yogurt, cheese, and just about anything to add some fun to our  meal, but when dip becomes the meal it’s even better.

While I use to have to pull out my large steamer to get vegetables cooked in a more healthy fashion, it took so much time and wasn’t that much fun to clean. That’s why I love Birds Eye Steamfresh Vegetables.

Ingredients

Recipe Directions

Cook the Birds Eye Steamfresh Vegetables according to directions.

Mix 1/2 cup sour cream with the entire package of Birds Eye Steamfresh Broccoli Cuts or Florets.

In tortilla bowls or bowls, evenly layer Birds Eye Steamfresh Chef’s Favorites Lightly Seasoned Southwestern Corn, 1 cup of cheese, tomatoes, broccoli mixture, guacamole, remaining sour cream, and jalapeno.

When done, sprinkle with remaining cheese to finish.

Serve with tortilla chips or your favorite dippers. You could use vegetables, like carrots for dippers or try something like pita bread or pretzels. Or crunch up the tortillas and make a taco salad out of it!

I have to admit, the thought of broccoli in dip didn’t sound appealing, but these were absolutely delicious! We all gobbled ours down, even my anti-vegetable husband who is more trouble than my kids.

My 2 year old is in his picky stage (at least I hope its a stage). So I make muffins that have shredded veggies in them. He LOVES muffins so this works well. I may have to try the smoothie recipe because that might be up his alley also because he likes milk and yogurt. Thanks for the ideas!

we blend in vegetables with their pasta sauce
and besides this they both love baby carrots so I let them snack on them as much as they want
