It’s Monday.   I’m heading this week to Blissdom.   In fact, I’m leaving Tuesday, since I’ll be attending the workshops on Wednesday, and won’t be home until Saturday late afternoon.   I’m leaving my three wonderful children with my amazing husband.   I love my husband to pieces, but if I was going to list his strong suits you wouldn’t see cooking among them.   I’ve mentioned before that when I met him, he used to cook raw chicken in the microwave for every meal!   It didn’t take me long to introduce him to seasoning and baking chicken in the oven.   The first time he decided to make me dinner, in fact, he baked chicken in the oven…

with chili powder…

I guess I should have been more detailed in my instruction.   But, I love him, so I ate it with a smile.   From there he moved on to cooking spaghetti noodles until they were mush, burning rice, and liquefying milkshakes.   At least he tries.   I have a few things in the freezer, but my plan is to keep is simple.   Scott’s talents include re-heating, Tuna Helper, and rice, so there’s where I’m getting my inspiration.   There will be a lot of Green Giant Microwavable Steamers, cereal, and peanut butter and jelly in my kids future this week, but they’ll survive!

In fact, they’ll probably love it.

  • Peanut Butter & Jelly Sandwiches w/ Cottage Cheese &   Applesauce
  • Crackers & Cheese, w/ Raw Veggies & Diced Fruit
  • Cold Chicken Wraps   w/ Raw Veggies & Cottage Cheese
  • Crackers w/ Peanut Butter Dip w/ Applesauce & Cottage Cheese
  • Cold Turkey Wraps w/ Raw Veggies & Diced Fruit


  • Grilled-Marinated Chicken, Cream Corn, & Herb Noodles
  • Slow-Cooked Chicken & Noodles w/ Mash Potatoes & Rolls
  • Salmon w/ Steamed Mixed Vegetables & Rice
  • Chicken Wings w/ Chicken Noodles & Steamed Green Beans
  • Parmesan Chicken Nuggets w/ Parmesan Baked Potato & Rice
  • Leftover Night
  • Salad Night
