25 Days of Recipes: Bread Pudding with Lemon Nutmeg Sauce

Bread Pudding

  • 2 Eggs
  • 1 1/2 cups skim milk
  • 1 tsp vanilla
  • 1/3 cup raisins
  • 2 egg whites
  • 1/2 cup sugar
  • 5 slices bread cubed.

Lemon Nutmeg Sauce

  • 1/2 cup sugar
  • 1 1/4 cup water
  • 1/2 to 1 tsp nutmeg
  • 2 tbsp cornstarch
  • 1/4 cup fresh lemon juice
  • 1/4 tsp grated lemon peel
  1. Spray 9 inch square baking pan with non stick cooking spray
  2. Put bread squares into dish and sprinkle with raisins
  3. In mixing bowl, beat the eggs and egg whites
  4. Beat in milk, sugar and vanilla
  5. Pour over bread
  6. Bake at 350 degrees for 40-45 minutes or until knife comes out clean


  1. In sauce pan, mix sugar, cornstarch and nutmeg.
  2. Gradually whisk in water and lemon juice
  3. bring to a boil, reduce heat and cook stirring onstantly until sauce thickens and clears.
  4. Pour a little over each serving of the pudding as you serve it
  5. Refrigerate unused portion after it cools
