
Bread Pudding
- 2 Eggs
- 1 1/2 cups skim milk
- 1 tsp vanilla
- 1/3 cup raisins
- 2 egg whites
- 1/2 cup sugar
- 5 slices bread cubed.
Lemon Nutmeg Sauce
- 1/2 cup sugar
- 1 1/4 cup water
- 1/2 to 1 tsp nutmeg
- 2 tbsp cornstarch
- 1/4 cup fresh lemon juice
- 1/4 tsp grated lemon peel
- Spray 9 inch square baking pan with non stick cooking spray
- Put bread squares into dish and sprinkle with raisins
- In mixing bowl, beat the eggs and egg whites
- Beat in milk, sugar and vanilla
- Pour over bread
- Bake at 350 degrees for 40-45 minutes or until knife comes out clean
Sauce
- In sauce pan, mix sugar, cornstarch and nutmeg.
- Gradually whisk in water and lemon juice
- bring to a boil, reduce heat and cook stirring onstantly until sauce thickens and clears.
- Pour a little over each serving of the pudding as you serve it
- Refrigerate unused portion after it cools
