If you’ve been with me long enough, you know I have quite an addiction to Mexican foods, plus with three kids underfoot I’m all about quick and easy meals.
Both hormel Chili and Dinty Moore have been around for years. In fact, they’re celebrating their 75 Anniversary. That’s probably why I’m so familiar with them. You can use them to whip up some quick and affordable meals for your family, like Coney Island Casserole or Chili Pie.
During family nights, my mom and I use to whip up huge batches of delicious baked nachos using Hormel Chili! Now, I do it with my girls. In fact, we’re just about to start watching Aladdin on Disney right now and the nachos are heating up in the oven, so I thought I’d share with you the recipe before I go veg out on the couch.
Baked Chicken Chili Nachos
- 1 Can Hormel Chili with Beans
- 1 Small Can Sliced Olives
- 1 Large Can Valley Fresh Chicken
- 1 Bag Shredded Cheese
- 1/3 Cup Chopped Onions or Green Onions
- 1 Cup Chopped Lettuce
- 1 Large Diced Tomato
- 1/2 Can Diced Jalapenos (optional)
- 1/2 Cup Sour Cream, Guacamole, and/or Chi Chi’s Salsa (optional)
- 1 Bag Nacho Chips
On a large pizza pan, place a layer of Nacho Chips. Pile on all of your toppings, except the sour cream, guacamole, and/or salsa. Make sure you get lots of cheese on there too! Then, place them in the oven at 350 to bake. It will only take about 15 minutes, so keep any eye on them. Take them out with the cheese is soft and melted, and everything is warm.
Serve immediately with sour cream, guacamole, and/or Chi Chi’s salsa. This is can easily fill up a family of 4 during a family movie night.
