Kid-Friendly: Baked Chicken Nuggets

This is a great way to use up some of the cereal that comes so cheap when you are a frugal shopper. I use Chex, Rice Krispies, Cheerios, Kix, Honey Nut Cheerios, or other similar cereal. Plus, it’s a healthy alternative to fried chicken nuggets.

INGREDIENTS
3 Skinless, Boneless Chicken Breasts
1 Cup Cereal (crushed to powder)
1 tsp Salt
1 TBSP Garlic
1 tsp Paprika
2 Eggs

Preheat oven to 400 degrees. Dice chicken into bite size pieces. In a bowl, mix together dry ingredients. Mix until blended. Place eggs in a separate bowl. Dip chicken in eggs, then coat with cereal mixture. Place on a cookie sheet and bake for 20 minutes. Serve warm with dip.

Freezer Tip: Tray freeze, then place in a freezer baggie for long term storage.

Spice It-Up: Add some red pepper flakes to make this recipe spicy baked chicken nuggets.
