Easy Enchiladas Recipe

Being pregnant, I’d like to eat Mexican food every single night. Unfortunately, my family doesn’t feel the same. I did manage to sneak enchiladas on the menu for this week and I’m using a very easy recipe that you can customize to fit your family.
Ingredients
Tortillas
2 Cans Enchilada Sauce (or make your own)
Shredded Cheese
Diced Onions
Chopped Green Onions
Diced Pre-Cooked Chicken (or Beef or Steak)
Add your favorite ingredients (refried beans, tomatos, black olives, lettuce etc…)
Preheat oven to 375. Pour 1/2 enchilada sauce in the bottom of a casserole dish. Fill tortillas w/ chicken, diced onions, 3/4 cheese, and your favorite ingredients. Roll and place side by side in the dish. Tops with remaining sauce and cheese. Sprinkle with green onions. Place in oven and bake 20 minutes or until cheese bubbles. Serve with sour cream and/or guacamole.
