This weeks recipe is not only quick and easy, it’s healthy! To help cut your grocery budget, I highly recommend going vegetarian now and then. Meat is one of the most expensive items on our grocery lists and it is something American consume in excess, so I try to have 1 or more meat free meals a week. It’s healthier and cheaper! Meijer prices below are listed from the 02/12/09-02/18/09 advertisement.
3 large avocados (4/$5 @ Marsh
4 tomatoes or grape tomato equivalent (grape tomatoes 2/$5 @ Marsh, tomatoes $1.28/lb @ Kroger & $1.29/lb @ Meijer)
1 small onion or small bunch green onions (diced) (green onions 2/$1 @ Kroger, onions 0.88 @ Meijer)
4 tomatoes or grape tomato equivalent (grape tomatoes 2/$5 @ Marsh, tomatoes $1.28/lb @ Kroger & $1.29/lb @ Meijer)
1 small onion or small bunch green onions (diced) (green onions 2/$1 @ Kroger, onions 0.88 @ Meijer)
1 cup mayonnaise
salt & pepper to taste
parsley or cilantro (chopped for garnish)

Mix tomatoes, onions, mayonnaise, salt, & pepper in a bowl. Mix & refrigerate until serving. Just before serving, slice avocados lengthwise and remove pit. Fill the avocado pit area with the tomato garnish mix.
Serve on a bed of lettuce or surrounded by fruit for a healthy meat-free meal or serve as a side dish! Fruit & lettuce are all on sale this week. Mix and match based on the deals.
