Orange Chicken with Rice Recipe

This week’s recipe is really cheap to make, because most of the ingredients will be already stocked in your pantry and spice rack. In addition, it’s a healthy Chinese meal your kids will love and can even help make! Orange Sauce:
1/4 c orange juice (or pineapple orange for a different taste!) (2/$5 @ Meijer, concentrate 10/$10, $2/6 @ Marsh, 4/$5 @ Kroger)
6 tbsp brown sugar
2 tbsp sugar
2 tbsp soy sauce
2 tbsp water
1 tbsp corn starch
3 tbsp vinegar
1 tsp ginger powder
1/2 tsp onion powder
1/4 tsp Worcestershire sauce

Chicken:
2 lb chicken breasts (boned, skinned, & cut into bite size pieces) ($1/lb @ Meijer, B1G1 @ Marsh, $2.99/lb @ Kroger)
2 eggs
1/2 tsp salt
1/2 tsp pepper
1/4 tsp paprika
2 c flour
vegetable or olive oil (olive oil $7.99 @ Marsh)

First prepare the orange sauce by mixing water and corn starch in a small bowl and set aside. Combine remaining sauce ingredients in a sauce pan and heat over medium-high heat until it reaches a gentle boil. Add the water/corn starch mixture slowly while stirring. Boil until desired consistency and remove from heat.

Mix the dry chicken ingredients together in a separate bowl, then place the eggs (whipped) in another bowl. Dip the chicken in the egg. Roll chicken in the flour mixture and deep fry in oil until cooked thoroughly. Remove and set on aside to drain and dry.

Serve with sauce on top and rice on the side or put the chicken and sauce on top of the rice! Cook rice in chicken broth, instead of of water, for extra flavor! Or use a Knorr Pasta Rice Side 10/$10 this week at Meijer.

You may also customize this recipe by adding broccoli (10/$10 @ Meijer, $0.98 @ Marsh, 3/$5 @ Kroger), snow peas, mushrooms (10/$10 @ Meijer, $1.99 @ Marsh), carrots (10/$10 @ Meijer, $1.88 @ Marsh), onions (1.29/lb @ Marsh, $0.69/lb @ Kroger), or your other favorite vegetables! Add oranges for decoration ($0.49 @ Marsh, $3.99 3lb bag @ Kroger). Instead of frying the chicken, just cook it in a skillet or grill it to make it healthier and less fattening. Adding in your veggies makes this a perfect meal!
